Dinner with post graduate students and retired lecturer.

This event is held last 23 August 2019. It is a casual dinner gathering with post graduate students and retired lecturers. Main dish is soup using Qurban beef and bones. Food was prepared by lecturers, staff and postgraduate student from Digital Signal Processing (DSP) lab and Embedded lab. The event is held at Block P04. 
Dishes for the dinner: 
  • ubi rebus (boiled cassava), 
  • *meat+bones soup, 
  • Baguette bread. To be eaten with soup
  • Gardenia loaf bread. To be eaten with soup
  • *KFC inspired gravy for barbequed chicken and meat, 
  • *kelapa parut manis (sweet grated coconut) to be paired with steamed cassava,
  • *Nigerian rice dish
  • *Nigerian beef dish
  • *Nigerian traditional drink in bright red
*Not much picture of the dishes since I am busy preparing the main dishes and make sure enough plate for the guest.






Barbeque process:

Using the planted pisang nipah leaves as newspaper replacement under grilling place.
Main dishes by me: boiled cassava and KFC inspired gravy.

I do add garlic and ginger for the boiled cassava. As attempt to reduce bloating effect after eating boiled cassava. Thankfully both ingredients used is unnoticed by the guests. Even one of the staff able to break wind after eaten the boiled cassava with ease.

The KFC inspired gravy does compliment well boiled cassava. I do add black pepper in the gravy for extra taste. It was my first attempt in eating such gravy with boiled cassava. Glad it turned out well. 
The most nostalgic and traditional dish is ubi rebus (boiled cassava) paired with kelapa parut manis (sweet grated coconut). I do forget to take picture of it. One of the lecturer and guest did mentioned that they have not eaten such dish for a long time. They even able to share the history of the dish with international post graduate students. Glad to be able to make such dish for them.
Cassava often become preferred food choice when Malaysian facing problem in obtaining common food sources. Such as during monsoon or civil disasters, or during wars such as World War II [1]. 
That is why for me it is important to keep planting cassava around your place. Better safe than sorry.
The look of used cassava for boiling cooking method.
Thankfully the cooked food from staff and additional food from Nigerian student enough for our 18 dinner guests consumption. Seems like the soup does complement well rice cooked by Nigerian postgraduate student.
The used ingredients :
  • around 3 kg peeled cassava, 
  • 3 times of KFC inspired gravy recipe, 
  • 1 whole grated coconut, 
  • 2 kg meat+bones for the soup, 
  • 5 pack of ready-made marinated chicken and lamb.
Took around 2 and half hour to complete cook boiled cassava, KFC inspired gravy, sweet grated coconut and meat+bones soup on the spot. The soup take almost 1 and half hour to achieve tender cooked meat.
I used Elba pressure cooker to boil cassava [3]. Then immediately start cook soup after the inner pot of pressure cooker cool off. For KFC inspired gravy, I used my Kenwood Multi Cooker model CP 335 [4]. It does feel worth owning my precious Kenwood Multi Cooker. As it still serve me well after 9 years.
My plan in cooking soup for last goes well. As the pressure cooker helps to keep the soup warm until the end of dinner around 11 pm.
